Ingredients
- 8 ounces (227g) mascarpone cheese
- 1/4 cup (30g) powdered sugar, divided
- 1 cup (239g) heavy whipping cream
- 1 teaspoon vanilla extract
Instructions
- In a cold large bowl, use an electric mixer, beat heavy cream until soft peak, add 2 tablespoons of powdered sugar and beat for 30 seconds more, set aside.
- In another bowl, beat the mascarpone cheese until fluffy, add the rest of sugar and vanilla extract and beat to incorporate.
- Using a wire whisk, whisk 1/3 of the cream into the mascarpone to lighten it up. Then using a spatula, gently fold in the rest of the cream.
